The name travels these days: Tyre, Jal el Dib, franchises out in the Gulf. This is not about any of that. This is the counter on Sidani Street in Hamra, facing the Medco station, where the whole story started in 1988.الاسم صار يسافر: صور، جل الديب، وفرنشايز بالخليج. هالصفحة مش عن هيدا كلو. هيدي عن الكاونتر بشارع سيداني بالحمرا، مقابل محطة ميدكو، محل ما بلّشت القصة كلها سنة 1988.

The order never changed: bread pressed on the grill until it cracks, fillings stacked the same way for decades, and a line of people who all think their usual is the correct one.الطلب ما تغيّر: خبز مكبوس عالغريل تيقرمش، حشوات مرتّبة نفس الترتيب من عشرات السنين، وطابور ناس كل واحد فيهن مقتنع إنو طلبو هوّي الصح.
