Fifty years on the same fire
Apo has been threading kebab onto skewers since 1976, which makes it one of the oldest grill houses in Bourj Hammoud. The recipes haven't moved an inch in fifty years — kebab laban, kebab karaz, soubeureg, manteh — and the charcoal does the talking. The house recently moved into its new garden terrace a few doors down; same fire, same family, more chairs.
Ask the neighborhood and you'll hear the same thing reviewers write: the quality hasn't changed one bit over the years. That kind of consistency is the rarest dish in Beirut — Apo serves it daily, with extra garlic.
