In 1949 Arsen Heybelian opened fifteen square meters of falafel in Bourj Hammoud; when the street was named Arax, the shop took the name and never let go. Seventy-five years later the counter still runs on yellow stools, pickled peppers and falafel fried hard — crispy shell, soft heart. There's even a namesake in Glendale, California now. The original never left Dora.
