CORKS is the neighbourhood wine den of Chris and Steph, two founders from France who now call Hong Kong home. They took a corner room on Hollywood Road, folded the glass front open to the street, and let the evening run on two things: good bottles, and no hurry.CORKS 是 Chris 和 Steph 的街坊酒館。兩位創辦人來自法國，如今以香港為家。他們在荷李活道租下一間街角小室，把玻璃摺門向街敞開，讓一個晚上只講兩件事：好酒，和不趕時間。

The list leans home, from grower Champagne to easy reds by the glass, and the chalkboard does the cooking: saucisson, rillettes, cheeses cut at the counter. Happy hour is generous, the service charge does not exist.酒單帶著法國家鄉味，由小農香檳到易入口的杯裝紅酒；廚房則交給黑板：風乾腸、熟肉醬、吧檯即切芝士。Happy hour 夠慷慨，服務費不存在。

Nothing here is complicated. A board is cut when you order it, the spreads come with bread still warm, and the cheese is chosen at the counter rather than off a list.這裡沒有複雜的事。拼盤即點即切，抹醬配上還暖的麵包，芝士在吧檯挑選，不必對著菜單猜。

Wednesdays are oyster nights, and the olives sit in a jar on the counter that you help yourself from.逢星期三是生蠔之夜；橄欖放在吧檯的大玻璃罐裡，自己動手取。

Every cork pulled at the bar goes into the wall by the door. It is the only decoration the room ever needed.吧檯開過的每一個木塞，都放進門旁那面牆。這間房間需要的裝飾，就只有這個。
